Cinnamon Toast Pancakes

I had this super yummy and healthy pancakes for breakfast today alone ![]()
I love this song from Shania Twain – Forever and for always that I’m listening to now and I want to share it with you ![]()
These pancakes are loaded with heart-healthy almonds and milled flax seed that is loaded with omega-3 fatty acids.
I make them often as they are mainly made out of ingredients that you can keep them for a long time like: flax seeds, poppy seeds or almonds. I usually make a stock of these ingredients as they are healthy, tasty and I use them for many type of cookies.
Ingredients
Serves 4
Vegetable oil spray(I used the oil from the bottle not the spray)
Batter
3 eggs
2 tbs water
1 tbsp vanilla extract
Mix in the mixer: 1 cup almonds ,1/2 cup flax seeds and 1/2 poppy seeds
1/4 cup bulk sugar substitute(I used 2tbs honey, you just have to be careful as they can easily burn on the surface , the hard part is to turn them over as they are so soft…but if you add small quantities like 1/2 tbs it’s doable

1 tsp baking powder
a pinch of salt
Cinnamon Sprinkle
cinnamon powder
1 tbsp bulk sugar substitute(I used powdered sugar)
Fresh blueberries or strawberries, for garnish(I used 500g of frozen strawberries. I cooked them with 2 tablespoons of sugar(you can use sugar substitute) and 1/3 teaspoon of ginger chopped in small pieces – super yummy)
Directions
Grease a large skillet with olive oil and heat over medium-high heat.
Beat the eggs and then add all the other batter ingredients in a bowl and mix with a wooden spoon until well blended.
Pour mini-cakes formed with a spoon of batter onto the hot skillet, and cook on both sides(I turned them on the other side with a spoon).
Combine the cinnamon and sugar substitute and sprinkle over the hot cakes before serving. Optionally garnish with cooked or fresh berries.

Good music and healthy pancakes go well together
That looks really good. I cnnoat eat anything with wheat/gluten. So I will definitely try this. Although I think Whey powder might have some. I’ll check. I have Living Fuel Protein Powder. Will try it. Thanks so much for the recipe and the video. Cheers!
