Carrot and Ginger Cake

I know that when you think of carrots, cakes are the last thing it would come to your mind! I had the chance to serve this great cake when I visiting some friends, and I simply felt in love with it. Modifying some of the ingredients according to my taste I made this carrot cake that is my favorite for the time being. I often say: “Oh this is may favorite now, no, no, this one is my favorite now”, it’s true, it’s hard to choose a favorite, but if I think of cakes in this moment, this cake comes first to my mind, and what more would I need when this thing is even healthy! It’s moist, it’s spicy and fresh at the same time…so knowing I’ve made you a great appetite, let’s get to work!


You need:
• 4 medium carrots
• a piece of grated ginger(plum size)
• vanilla essence
• 200g whole grain flour
• 6 tbs of bran
• 4 tbs of wheat germs
• 2/3 cups powdered sugar
• 150ml oil
• 4 eggs
• 100g grated walnuts
• 2 tbs baking powder
• 2 tsp cinnamon
• a pinch of nutmeg
• 1 tsp gloves
• a pinch of salt


For the topping:
• low sugar orange gem or small, peeled orange pieces
• creamy yoghurt or cream cheese(mix it with sugar, if you prefer. I liked it simple to have a good contrast!)
• small pieces of walnuts
• cranberries
• a bit of grated ginger


Mix the eggs. Add the oil and keep mixing. Add the grated carrots, ginger, vanilla essence and mix. Mix together the rest of the ingredients and then mix them all together. You should have a thick batter now, if it’s not, add some more whole grain flour. You need to have it thick, because the carrots have a lot of juice. I’ve made 2 doughs cooked in a 9.4″(24 cm), with this batter quantity, to make sure it will be cooked. Set to the oven at 356 F(180 C) for about 30 min, or when it passes the doneness test with the toothpick. If you cook 2 different doughs, like me, keep the other one in the fridge, in the meantime. When the doughs have cooled, simply spread the orange gem or if you have oranges, spread the cheese cream(yoghurt) first, and then add the orange pieces afterwards, on top. Sprinkle small pieces of walnuts, cranberries and grated ginger. This recipe is versatile, because it has lots of flavors, it’s not necessary to add them all. Don’t get stressed if you don’t have wheat germs or bran, replace them with flour, I’ve added them because they are healthy. You can also replace the nuts and dried fruits with what you prefer :)
