Arugula, grapes, walnuts, parmesan salad



I think I haven’t posted meals for a long time. Event hough I’ve cooked a lot and I’ve made photos to show you, guys, I just couldn’t find the time to post. Since I’ve recently started a little diet with simple food for loosing weight, but also because, as I said, I don’t have time to cook very complicated meals. So I often use salads for lunch, as I did today. This is one of my favourite salads lately. It has a very good balance of sour and sweet, plus plenty of flavour from its very different ingredients. I love to use fruits in salads and this one has grapes, which give a very good sweetness to the salad.
Hope you enjoy it, as I said is super delicious! The ingredients are:
• 4 leaves of green salad cut in medium pieces
• plenty of arugula
• grapes cut in half from 1/2 bunch of black grapes
• a few parmesan curls
• 1 tbs of chopped parsley
• 1 green onion cut in small pieces
• a handful of roasted and smashed walnuts
• 1/2 tsp sugar
• 1/2 tsp salt
• 1/2 lemon juice
• 1/2 cup yoghurt
• olive oil
