Best chocolate cake

I have times when I love chocolate, I have times when I hate chocolate, but when I love it, I love it to death :)). For 3 moths now I’ve been hating chocolate, but now I’m craving for chocolate ..this is so strange, but the truth is I want it so much that even convinced my husband to have a great appetite for it 🙂 so we will get out in a few minutes to buy some chocolate! Until then I’ll be posting my best recipe for chocolate cake, that I admit that if I would have it right here, right now, I would eat at least 2 slices!

-200g dark chocolate(at least 60% cocoa, I like Schogetten or Milka and I don’t recommend bulk chocolate)
-200g butter cut in pieces
-1 tablespoon instant coffee granules dissolved in 125ml water
-170g of flour
-1 tablespoon baking powder
-250g sugar
-vanilla extracted from one vanilla bean(or alternatively you can use vanilla essence)
-25g cocoa
-3 eggs
-75ml(5 tablespoons) buttermilk -> you can prepare buttermilk by mixing one cup of milk with 2 tablespoons of lemon juice, leave it for 5 minutes or until it gets like a yogurt in consistency

-200g of dark chocolate
-100g milk chocolate
-200ml milk cream
-vanilla extracted from one vanilla bean(or alternatively you can use vanilla essence)
-1 teaspoon butter
-2 tablespoons honey

Juice for moistening the batter:
-1 cup water
-3 tsp sugar
-vanilla essence
-rum essence

Batter directions:

1.Break the chocolate into pieces and melt it on low heat with the butter, add the coffee, sugar and vanilla. Do not overcook(just until the chocolate is melted and the sugar has dissolved) and stir continuously!

2.Mix the flour with the cocoa and the baking powder

3.Beat the 3 eggs with a fork and add 5 tablespoons of buttermilk

Mix the 3 compositions. Set the batter in a tray and put it in the preheated oven at 160 degrees C for 1h30min
After the batter has cooked let it to cool, then cut it in 3(horizontally) with a large sharp knife.

Cream directions:

1.Cook the milk cream and butter, when the mixture starts to boil, remove from the heat and add the chocolate breaked into pieces, vanilla and honey. Stir until the chocolate has melted completely.

2.Make layers with the 3 slices of batter, moistened with juice and small amounts of cream. Leave more cream for the top layer. Powder with cocoa on top and optionally add chocolate curls(I didn’t do this part). Keep in the fridge for at least half an hour. I cooked just for a few seconds the slices of chocolate cake the next day in the microwave before we ate them, because I like the cream to be slightly melted :D, if you like it firm just serve it the way it is.
