Hiuu quite a long title! We were craving for something sweet these days and biscuits were on the top of the list. But as I’m always in search for more natural food, I didn’t choose the easy way of buying some packs of biscuits mainly because those are full of sugar, and then a lot of fat and finally preservatives and other unhealthy chemicals, so in the end there is nothing good you get out of biscuits 🙁 Of course you will find the so called digestive biscuits but honestly those are pretty much the same thing just that they replace the wheat with whole wheat.
Biscuits are something easy to do, you can prepare and cook them very fast, and you can make them in large quantities for a whole week or even 10 days! The downside is that they are so good you’re gonna eat them in no time, this is the only reason I don’t like to make large quantities haha.
This time I’ve made 2 types of biscuits because I couldn’t decide for one.
Cookies with oatmeal flakes and coconut
These are not really biscuits they are more cookies, they are soft and have a delicious taste of coconut.
I also have a short story for them. They were brought by Australian soldiers in Italy around the First World War. I have to admit this story made me like them even more :)) I’m so strange sometimes!
125g oatmeal flacks
125g dried coconut flacks
60g sugar(I always make cookies with powdered sugar, it’s your choice how you like to feel it)
125g melted butter
1 tablespoon black molasses(I replaced it with honey)
2 tablespoons hot water
1 teaspoon backing soda
I’ve added vanilla essence and 1/4 teaspoon cinnamon also but it was not in the recipe!
Mix the oatmeal flacks, coconut flacks and flour in a bowl. Add the melted butter and make a dough.
Put the molasses(or honey) in a bowl, add the backing soda and the hot water and mix. Add it over the dough and
mix the dough until all is assimilated. Make round balls from one tablespoon of the dough and press them in your hands. Add the cookies on a tray covered with backing paper and optionally greased with some butter or oil. Bake for 15 min at 140 degrees C.
Biscuits with wheat bran and walnuts
These biscuits are raw and crunchy, but if you like natural stuff you’ll love these too.
125g grated walnuts
100g wheat bran
100g whole wheat/oatmeal flour(I’ve made this from mixed oatmeal flacks in the blender)
a pinch of salt
1 teaspoon of yeast(I didn’t have yeast and I’ve used backing powder)
125g butter(I’ve made them with 75g of butter because this is what I had left from the cookies)
70g powdered sugar
1 beaten egg
Mix the dry ingredients except for the sugar. Mix the butter with the sugar until you have a sparkling mixture. Add the beaten egg. This step never works for me because the mixture breaks like the the mayonnaise does, but it was ok. I think if you want to do it right you have to add very small quantities of egg in the butter mixture. Add this mixture on the dry ingredients and make a dough. Spread it with a paddle and make round or any other shapes of biscuits. Set them on a tray covered with backing paper and optionally greased with some butter or oil. Bake for 15 min at 180 degrees C.
