Lately I’ve spent some time in nature, harvesting autumn goods. And as I happened to watch a tv show about all kind of recipes you can do with the curly dock and as I remembered that we have a lot of it in the backyard, I started harvesting some seeds for my curly dock seeds flour bread. I used to eat different kind of food made from the leafs, but only after watching the show I’ve learned that all this plant’s parts are edible. It’s good knowing the plant because it grows on all continents except for Antarctica, and you can never know when you’ll need it for survival hehe 🙂 The leafs are high in Vit A, the roots are high in soluble iron and the seeds have a lot of fiber. The plant is very easy to spot, it has curly long leafs in the spring-summer and a high reddish-brown stock in autumn-winter with lots of little seeds of the same color, you can even see the plant after it has snowed as the color and height of the plant can be easily spotted on the white snow. The curly dock seeds can be harvest in autumn-winter when the seeds have dried. You can cut the stocks when you harvest it, and take the seeds off afterwards at home, they come off the stock very easy. The seeds have papery shell that doesn’t need to be removed, you will use the seeds together with everything else that comes off the stock to make the flour. Add the seeds in the blender or grinder and mix at high speed for like 3 minutes. You wont get a very thin flour as it has many fibers that can’t be cut so easily. This flour doesn’t contain gluten, so in order to make the bread we have to add some of regular flour also. You can use this type of flour, just like any other flour, for muffins, crackers, cakes..etc, just make sure to add regular flour also, for best results. You’ll instantly feel the full taste this bread has compared to the ones we are used to buy from markets. But you have to be careful with quantities, as if you are not used to eating savage flour breads, you can have diarrhea from the high quantities of fiber. Although it has a purifying effect of the blood and detoxification of your whole body, very large quantities of fiber aren’t recommended either. You can start with a slice a day and see how your body reacts. My husband felt in love with this bread, he won’t get over it easily, so I must find a solution for this issue, as unfortunately I don’t have all the time in the world to make bread on regular basis 🙂 Take the time to smell the flowers and enjoy at least once in a while the beneficial effects of nature’s wonders, often so available to us, but so little known or used.
The curly dock flour bread ingredients:
-1 cup white flour
-1 1/2 cups whole wheat flour
-1 1/2 cups curly dock flour prepared as described above
-2 teaspoons salt
-1 teaspoon sugar
-2 tablespoons olive oil
-30g yeast or 7 teaspoons of yeast(the normal quantity for a bread)
-lukewarm water(you’ll figure the quantities once you add it to the rest of ingredients)
Add all the ingredients in the mixer except for the sugar, yeast and water. Add some lukewarm water and the sugar over the yeast and let it stay for a few minutes, until it dissolves, add it to the rest of ingredients in the mixer, afterwards. Start mixing and add the lukewarm water, little at a time, until it forms one big dough moving in the mixer. Mix it for 1 minute. Let the dough lay covered for 2h. Take the dough, knead it with the hands just by packing it a few times. Make a bread shape, set in a tray greased with oil. Make some cuts on the bread and set it in the oven at 392F for 30 minutes. Take it out and let it cool.
