Lingoberry, cowberry or cranberry cobbler

I’m always very curious about new foods that I find at the local market. This year, I discovered the lingonberry or cowberry, first I actually thought they were cranberries(actually some call them mountain cranberries), but these are a little different, they grow at the mountains on high altitudes. While eating this cobbler I wondered how many people have worked to harvest them for such a low price :(.. These types of fruits require a lot of time for harvesting, this is what I’ve learned during our trip to Rodnei Mountains , where the blueberries(similar to these lingoberries) where all around us, and while returning from the high altitudes, we decided to take a break to harvest some, to take them home. After 10 minutes and a handful of fruits, or so, we gave up…

I’ve made this cobbler this year for so many times and the truth is that we can’t have enough of it! But it’s time to take a break..at least for while, while I’m on a very strict fat-free, sugar-free diet..but I’ll tell you more about this along with many such, actually delicious recipes, some other time.

It’s very much the same cobbler as the blueberry cobbler I’ve posted some time ago, just a little modified. But all post the recipe once again. Now about the cobbler..

It goes something like this:


Topping
• 3 tablespoons(60g) butter
• 1 cup whole grain flour
• 1/2 cup oatmeal(not instant)
• 2 tablespoon sugar
• 1 cup walnuts
• 0.8oz(30g) of dark chocolate (from the fridge)
• vanilla extract
• 1 1/2 teaspoons baking powder
• a pinch of salt
• somewhere between 1/4 and 1/2 cup milk


Filling
• 3/4 cups of sugar
• 4 tbs whole grain flour
• 6 cups(2.2 pounds or 1 kg) of fresh lingoberries (frozen works, too)
• 1 tsp cinnamon
• 1/4 tsp gloves powder
• 1/4 tsp nutmeg
• 2 teaspoons lemon juice
• zest from 1 lemon


Mix the flour, oatmeal, sugar, baking powder, salt in a bowl with a spoon or in food processor. Mix the walnuts and chocolate in a blender, then add to the rest of the dry ingredients. Add the butter and mix, then add the milk, vanilla extract, the lemon zest.

Use one deep(I mean really deep) tray, because the filling will run out when bubbling in the oven, so make sure to leave enough free space(like 3 fingers or so). Add the mixed ingredients from the filling. If you don’t have all the spices, it’s ok, it’s very good without them too. Then add the topping in chunks.

Bake in the oven at 400F(190 C) for 30-35 minutes.”
