My cooking from this Saturday

This Saturday I’ve made 2 recipes that were so yummy, that I must share. One of them is eggplant salad, it’s kind of tradition to make this in Romania, even if it’s not a specific Romanian traditional food. It’s so tasty and if you know how to make it it’s healthy too! The second it’s a vegetable souffle, a recipe from a restaurant presented on a tv show 🙂

I’ll start with the eggplant salad.
– 3 eggplants
– mayonnaise made from one egg yolk, a teaspoon of mustard and cold pressed sunflower oil
– salt
– pepper
– a fine grated small onion

First wash the eggplants .Put the eggplants in a tray(I have a special tray for this salad, one that I don’t care too much about it haha, because you have to use it on the stove not inside the oven and it gets damaged, and it’s hard to wash it). You have to place the tray on the 2 flaming meshes, leave them to cook, and roll them on different sides once in a while. When they are fluffy all over, they are done. Some people cook them directly on the stove, but they burn, they have a dark color and they are not healthy this way! It’s better to cook them on a tray. After the eggplants cool, peel the burned skin off. It looks like this, it’s messy but this is how they are supposed to look.

Cut the eggplants on a trencher.

Make the mayonnaise, add the cut eggplants, the fine grated onion, salt and pepper.
We ate this with cherry tomatoes. Super yummy!

My second recipe:
Vegetable souffle

You need:
– slices of 6 boiled potatoes
– a chopped cabbage and 2 grated carrots cooked in a pan with 2 tablespoons of oil
– 300g mushrooms cut in slices and fried with one tablespoon oil
– 3 green onions cut in pieces and fried with a teaspoon of oil
– greens(I used lavage leaves, parsley leaves, dill leaves) small chopped
– breadcrumbs
– 2 eggs
– flour
– milk
– salt
– pepper

1.Add baking paper on a tray. Grease it with oil, add some breadcrumbs, and make layers with 1/2 of the sliced of potatoes, 1/2 grated and cooked cabbage and carrots, mushrooms, green onions fried, then once again 1/2 of the sliced of potatoes, 1/2 grated and cooked cabbage and carrots and the greens. I add a little salt and pepper on each layer for a more tasty result.

2.Sauce: Fry the flour in a pan just a little. Let it cool. Add milk and stir to make it smooth. Cook this again until it’s like a fluid pudding. After this cools add the beaten eggs, salt an pepper. Add the sauce on top

3.Set the tray in the oven at 180 degrees C for 30-40 minutes.

I love this type of food! It’s healthy and delicious
