I know you love simple recipes, I do also because let’s be honest we don’t really have time for cooking nowadays. So moreover when I come around something that is also delicious and healthy, that usually pops up on my cooking list…I like to be organized and to eliminate stress as much as possible, so I don’t have to wonder every time OMG I have no idea what should I be cooking today? I have a file with list of my favorite recipes that are repeating in our menu after a while. So my grocery list is ready in 2 seconds..speaking of which I had to show you my groceries from one of these days: basil, blueberries and watermelon…ah my favorites! They scream sumeeeer!
I use basil a lot in summer and this time I’ve made an Italian recipe, I’m sure you’ve already tried the pre packed ones, or at least heard of it, but I’m also sure not many of you have tried making it at home. Well I’m one of the few…I guess..who has ONLY made it at home so I have no idea how the pre packed ones taste. I’m pretty sure you can make this in a dozens of ways, you can replace the pine nuts from the original pesto recipe with walnuts or almonds, or you can replace the basil with parsley or dill. Well my recipe of pesto goes something:
• 1/4 cup grated Parmesan cheese (but I used dry goat cheese)
• 3 cups fresh basil leaves
• 1/2 cup chopped walnuts or pine nuts or any other nuts(I used almonds)
• 2-4 cloves garlic, peeled
• 1/2 cup virgin olive oil
• salt and pepper to taste
• spaghetti pasta boiled, cold water splashed, drained, and mixed with a little olive oil, salt and pepper.
Mix all above ingredients for the pesto sauce in a blender:
..then add it over the spaghetti. And that’s it! Super delicious!
