Salmon with sweet potatoes, garlic and parsley


I’m, so far, really happy with the diet I’ve started a month ago, and I’d like to share with you some of my recipes. I’m hoping to be able to post as many as possible so in the end I could make a fasting , easy to follow plan of eating healthy, balanced and last but not least: a really delicious meal, specially for you, guys!
We all know fish is healthy, but some of you might find some of them, like salmon, a little too pricy. Let me tell you that eating 100g of salmon is better then 250g of pork or chicken, but the price is almost the same, so why not eat less but good, than more of bad? Even when it comes to food there are many things we could skimp most of the processed foods, but the basic things like veggies, legumes, fruits, fish and nuts should never be left out.

For this recipe(2 servings) you will need:
• 250g of salmon
• 2 medium sweet potatoes
• a small bunch of fresh parsley leaves
• 2 garlic cloves
• 3 tbs of olive oil
• 2 tbs of yeast flakes(these are very healthy and somehow substitute and resemble the taste of hard cheese)
• 2 tsp flax seeds flour(or grind some fresh seeds with the blender)
• special spices for fish
• I also used special spices for potatoes

Place the salmon on a tray covered with backing paper. Only salt the salmon, don’t add any spices or oils. Cook for 25min at 356F(180 C). When it’s done, place it on the plate and sprinkle the special spices for fish. Meanwhile prepare the unpeeled sweet potatoes like this, with 2tbs of olive oil and replace the cheese with yeast flakes, sprinkling it on top of the potatoes together with the potato spices, if you have. It would be best to have 2 ovens to cook the fish and potatoes at the same time, but I don’t, so I cooked them together in the same oven, half the time..Meanwhile prepare the sauce. In our country we have a special name for this, but let’s just call it garlic sauce, with some little changes I’ve made. Finely chop the garlic, then mix it in a medium bowl with salt, 1 tbs olive oil, 2 tsp flax seeds flour then add 1/2 cup of water and chopped parsley leaves. Place the sauce/salad also on the plate and serve together with salmon and potatoes. Some people consider the sweet potatoes too sweet for a main course, but even if I don’t usually cook sweet meals for lunch, I really liked how the slight sweetness of these potatoes fit in.

This was my shopping day and after an entire day of walking from one store to another I had the option to eat junks or other seemingly healthy foods like pasta and soups filled with unhealthy, hidden fats from the food court and it was very tempting indeed, but I was a good girl and prepared the healthy meal by myself, now I can’t say I regret it in anyway and I can’t wait to show you my new figure in a pair of jeans I currently started fitting in!
