Spinach Soup

This is one of my favorite soups. You can make salad, patience or any other green leaves soup, this way.

You need:
-1kg green leaves (spinach, salad or patience) washed
-5 green onions cut in pieces
-5 tablespoons olive oil
-a cup of rice
-1/2l of yoghurt
-juice from half a lemon
-fresh dill
-salt, pepper and
-fresh parsley – optional
-fresh lovage – optional

This soup will be ready very fast. You need to fry in olive oil the green onions just for a little, then add the green leaves, the rice, water. When the rice is done add the yoghurt, chopped dill, parsley and lovage, salt, pepper and lemon juice as much sour as you like it to be – I add the juice from half of a lemon. This is it and it’s super-yummy and healthy. You can eat it warm or cold, it’s good either way.
