
Hi guys! I’m writing for you for the first time from my backyard under my favorite cherry tree, where, after one day of work, we managed to install electricity. As promised I’m coming with a brand new delicious recipe with walnuts and cherries, such a good match. My cherry trees are so full of fruits now..
..that I have to come up with so many recipes, and given the fact that I’m not used with eating large quantities of sweets, the next recipe will be a sour-salty-sweet recipe 😛
The walnuts pancakes with cherry sauce, is now my and the whole’s family favorite recipe with cherries. I’ve done it 2 times in row now, and I’m still tempted to make more.
These are small pancakes, so it takes some time to cook them, but I tell you guys, this is so worthy!
You can start with the cherry sauce:
• 1 kg cherries
• 4 tbs sugar
• 4 tsp whole grain flour
• almond essence
• 1 tsp cinnamon
Pit the cherries, then mix half of them only, letting some untouched. Put them in a pan together with the sugar, flour. Cook until it thickens, then add almond essence and cinnamon. Set aside and make the pancakes.
For 8 servings(aprox 6 small pancakes/serving) of pancakes you need:
• 4 eggs
• 4 tbs sugar
• a pinch of salt
• 3 cups walnuts
• 8 tbs whole grain flour
• 1/2 teaspoon backing powder
• 1 cup milk
Beat the eggs with a pinch of salt and the sugar. Add the rest of ingredients and mix well with a whisk. Grease a pan and cook small or medium sized pancakes, turning them over when they start to make bubbles on surface.
Serve the pancakes with cherry sauce on top. Super, super yummy!
